MEDITERRANEAN EGGPLANT ON A STICK.

RECIPES:

MEDITERRANEAN EGGPLANT ON A STICK:

– 1 pound ground meat.

– 8 medium size italian eggplants.

– salt and pepper.

– 1/2 teaspoon of all spice.

Add salt and pepper and all spice to the meat. Mix well. Wash and cut the eggplants in wedges. On a bamboo skewer alternate an eggplant piece with a small scoop of the meat.

Broil or barbeque the skewers making sure all sides are well cooked. Serve with a tomato and cucumber salad.

TOMATO AND CUCUMBER SALAD:

– 2 cups fresh diced tomatoes.

– 1 cup fresh diced cucumber.

-1/2 cup diced scallions.

Dressing: – 2 tablespoons freshly squeezed lemon juice.

– 2 tablespoons virgin olive oil.

– salt and pepper.

Mix and add to the salad and give it a quick toss.
