AUNT ANNA’S VEGETARIAN SWISS CHARD SOUP

2 bunches Swiss Chard

4 large carrots

1 large onion chopped

1 can of garbanzo beans

2 tablespoons olive oil

Fill a large saucepan with water and bring it to boil. Wash and cut the swiss chard into large strips. Place in the boiling water until wilted. Drain.

Saute the onions in the olive oil for 2-3 minutes. Then add the carrots, garbanzo beans and the swiss chard. Add 4 cups of water salt and pepper to taste and let simmer for 20 minutes.
