Aunt Silvia’s Almond Chews.


3 egg whites

1 cup sugar

3 cups almond flour

1 teaspoon almond extract

Candied cherries (optional)

Beat the egg whites until white and frothy. Mix almond flour and sugar together. Add the almond extract. Fold in the egg whites until a paste is formed. Divide into one-inch pieces and place on a parchment paper. Place a candied cherry on top of each piece.

Pre-heat the oven to 350 degrees. Cook until the almond chews are golden brown, approximately 45 minutes.

Take them out of the oven and immediately cover with a damp towel. Let it cool.
